Late reply is late, but sometimes we just say “Mexican” to refer to “Mexican food” when it’s obvious in the context, like “I’m hungry, let’s grab some Mexican.” “A new Mexican has opened” sounds really awkward and makes it sound like a Mexican person is opening, whatever that means.

Or actually, There was this one place in Colorado I think that had tacos de canasta con papas fritas with an AMAZING guajillo sauce. A little crema to even out the heat… man… I’m drooling…
