Apparently, Rarity had already tangled with lobsters before this started, and there was a series of pictures about her brushing off a coconut crab; inspired by this, Whatsapokemon commissioned Indigoh and some other artists to draw Rarity fighting a giant crab, and the idea was silly enough that it took off and will probably make it into the show (or at least the comics) sooner or later.
There’s some discussion at this Reddit thread, and Whatsapokemon’s “Rarity Fighting a Giant Crab” gallery is here. There’s also a Know Your Meme page, but it’s not particularly informative.

Legend has it someone commissioned a bunch of artists to draw her fighting a giant crab. It was weird and awesome enough that people started drawing it on their own.
