What’s so hard to follow. Sunset is a power hungrey villain, but she genuinely enjoys having friends that like her and willing participate in her plans.

Here’s a novel idea: Sunset did actually learn the magic of friendship from Celestia, and she and her collection of minions (Snips and Snails, plus maybe three more) are genuinely friends with each other, but she’s still a power seeking villain.
That’d make for some poor conflict…
I’d say that Sunset could’ve been presented more tactful. Less like an High School Bitch and more… restrained, shall we say? Downplay her maniacal side and make it more subtle.
Same here. Either that or the royal system was going to be replaced by a representative government with the Mane 6 as it’s leadership. That might have been a bit prestigious for a kids show, but I do think Twilight’s Destiny was likely to become the arch mage and run the school, basically becoming the successor of Starswirl the Bearded.
I always figured that meant “magic teacher”.

Eh, most people would consider her method of choosing princesses based on their entry exam into her school to be pretty reckless, and it’s hard to claim “results” when Twilight has been princess all of 10 minutes (though we should probably keep in mind that all the princess stuff was retconned in after Lauren Faust left, and we may never know what her original plans were).
