There’s a documentary called the Sweatbox about the making of ENG which is excellent.
The short version is they had plans for a big sweeping traditional disney shenanigan, got screwed by execs, got a harsh deadline, and rewrote the entire movie in that timeframe using mass quantities of caffeine.
I also suggest looking up Snuff Out The Light, the Yzma villain song that got cut.
