You’re leaving out how most unicorns contributing to that process would’ve ended up losing their magic forever, one day.
I’d lean on it not being literally every day they’d lose their powers, but still often enough that it became a problem.

Still requires several of them to do that, and only a few pegasi to alter the weather, or a few earth ponies to manage a huge farm. So they’re not the only ones with special power.
