depends on how firm the pie is. some crumble when you try to cut them, so winnowing off edges of a single wedge works better, since trying to cut the slices evenly just turns the pie into a pile of crust and filling.
 
also slight error dividing the first half turns to bigger error with the quartering, and bigger with dividing it into eighths, leaving you with more unequal sized pieces than just eyeballing it.
 
I usually only take a sliver, so I’d have to cut a piece anyway, even if they were pre-cut.
 
there’s also the sanitation. pies keep a little longer and dry out slower if you minimize the exposure of their insides to the outside environment.

It is a pet peeve of mine. If you are going to cut a pie, cut the entire thing. Cutting out one single wedge is lazy and inconsiderate and often throws off the integrity of the entire pie. It is so easy to cut the entire pie into eight approximately equal pieces. Cut it in half, cut the halves into quarters, then cut the quarters into eights. When you cut just a single piece, most people do not cut to the middle of the pie and they do not cut the wedge out evenly. Then you are only half way to the middle of the pie and the wedge is the width of two and a half eights.
