The color draining is defiantly something new. Anno has touched ponies all the time, even for an extended period of time. Like that one time his face ended up between Limestone’s legs. Or the other time his face ended up between Limestone’s legs. Maybe it’s an effect of being close to the Choosing Stone.

Earlier pages in the comic state humans are like magic absorbing sponges. Absorbing magic allows them to have magical abilities, such as Anon’s insane strength, but unlike ponies, they have no way of ridding themselves of excess magic. Eventually they pretty much explode.
 
Anon here is simply absorbing magic. Magic is represented in color here; most pages are mostly grayscale.

if i have learned anything from the show its that harmony based magic and colour seem to go hand in hand, so following this rule anon possibly lacking any harmony magic himself or perhaps evan being a negative conduit for sed magic may be having an adverse effect, and in that sense possibly removing or neutralising the magic, or he could be a case that anons body is unknowingly absorbing the magic which could later lead to his inevitable demise.
