Yep its a slice of pear and then they smoke it into a pearperroni slice
If you look at how it’s been spelt, he says it as “Pearperoni”. So most likely they meant Pears.
Different recipes use different main ingredients. Some use beans or chickpeas, some use tofu… I even found one recipe that goes beyond and just uses wheat and yeast as a base. The only important step is in adding your desired spices (peppercorns, anise, paprika, mustard seed, fennel, etc) and probably some liquid smoke for the desired flavor.
Probably hay with pepper.
