You are able to see your own anonymous uploads listed on your profile. But other regular users cannot.
Additional: If you don’t want it to be anonymous, you can submit a report to fix the uploader credit.

I believe it just shows a random Background Pony for the poster of the image. But mods and people that don’t mind searching around can find out who the actual poster is.
It helps for people trying to bypass the rules to post content that isn’t allowed anonymously.
Otherwise, not sure.
