Her Persona would have to represent who she is. For instance, Kanji Tatsumi’s Persona, Take-Mikazuchi, is this very manly god who rules over thunder.
No, Applejack’s would be Atlas. It would represent not only her strength, but also the eternal weight she feels like she has on her shoulder with having to take care of what is her world: her family.
How about Idunn, the Norse goddess of apples.

Well, Shadows usually are symbolic to the person’s inner feelings and are relevant to their Persona. For instance, Yukiko Amagi’s Shadow is a bird trapped in a cage! mirroring how she feels like she’s trapped at the Amagi Inn. It can also summon a Charming Prince, which mirrors her want for a prince to whisk her away from her dreary life. In relation, her Persona, Konohana Sakuya, is a bird-like goddess, with winged arms. Kinda like a harpy, but pink all over.
Not familiar with the Persona games, but I quickly thought of something like an apple tree that’s been choked with entangling vines, with Shadow Bloom tightly bound to it or even embedded in the trunk.
