Actually the majority of dairy cows are culled because of reproductive issues (infertility, difficulty calving, etc.), mastitis, or other untreatable or cost-prohibitive-to-treat diseases.

Also dairy culls are delicious, if you’re not picky about a bit of colour in the fat.

Biologically speaking, when milk cows stop giving milk, and it’s not due to age (and Rarity is obviously still quite young) it’s because they need a stud bull to get them pregnant again so they’ll start lactating again. The process is hormonally regulated. This is where almost all veal comes from in the US, incidentally.

Gilda can’t “take care of her” because she has neither the plumbing nor the correct number of chromosomes. So Gilda’s just being a big old meanie here.
