Power of imagination.
I softly pinch her ear between the index and thumb of my right hand, feeling her warm skin and the short, soft hairs.
My left hand rubs her check then slides down her neck, my fingers are gliding over her mane while my palm caresses her fur.
I move my right hand to the front of her face and point my index at her nose, causing her to squint. I proceed to boop her nose softly causing some wrinkles to appear and make her chuckle.

You have it backwards; the ponies discovered the unstoppable might of cuteness and offering ear scritches as incentives.
Obviously its just an effect of huge manestyles hiding the other one, and probably a lazy animation shortcut. But here, her left ear is huge, her mane is flat, so the other should be visible, but isn’t.
