I imagine Celestia would be furious if she felt a teacher was being racist in some way. Remember she's thousands of years old, so she's surely seen some bad times. She probably is so angry because she hoped her subjects have gotten past shit like this.
I don't see this as very out of character honestly. I think there's reason for her to be this triggered.
