The conspiracy theory would probably go something like this:
 
Celestia wanted more power and, in order to gain that power, she needed to remove Luna from the equation. She couldn’t outright exile her or strip her of her power, it would be seen as a coup of sorts and a decent portion of the populace would be uncomfortable with Celestia’s willingness to put an end to anyone who stood in the way of her acquisition of power.
 
So she needed something that would make her appear as the victim, she needed to be “the brave Princess saving her land from a grave threat.” So, perhaps one morning she refused to raise the sun, leaving the sky as though it were nighttime. When Luna attempted to confront her sister, she had to dawn the form of Nightmare Moon in order to combat Celestia, but it wasn’t enough and Celestia was successful in banishing her sister. Then the public was told that her sister refused to lower the moon, instead of Celestia refusing to raise the sun, and had attempted to slay Celestia when she told her to lower the moon. Leaving the general public to believe that Celestia was their savior, and all too willing to let her take on the role of the sole ruler of Equestria for the next 1000 years.
 
You could refine that and I’m sure some would believe it.
