It’s funny how people are assuming that the sun always has to rise in the east just because it does in our world.
Fun fact: Our sun only rises in the east because the earth is spinning to the east.

Kind of off topic wall of text or fanfic idea ;-)
Ignoring some of the “sun/moon” errors we got, all we know is that Celestia and Luna controlling the sun and the moon because they have to. Something might have happened to the world of Equestria that made it necessary that someone had to control the sun and the moon.
As a writer, thinking about the cause is very interesting especially because it’s most likely that this problem wasn’t always there. Except of course primitive animals had been able to control the sun/moon.

Especially if we’re looking back at the time shortly before Equestria was founded: Earth ponies had to produce food, pegasi controlled the weather and unicorns did…whatever they did. This was the world until the “Windigos” turned the world into ice because of the three tribes of ponies arguing.

Yes, there might have been Windigos but the whole thing sounds more as if something had caused an ice age. So the ponies searched for a new land and soon found a place that hasn’t been frozen yet. One leaded to another and the new land also started to freeze. Maybe it had been the Windigos because of the ponies arguing but what if it was the cause of a natural catastrophe? Maybe the Windigos aren’t the source of the ice but them getting attracted because of the ice just like animals that’re attracted by the temperatures they need to survive?

We know that the “Fire of Friendship” is a fire based spell caused by friendship (duh) and the more friendship, the stronger it gets. Since it’s not a real fire but magic, it wouldn’t burn everything because the casters might control it without even knowing.

Since there now is peace, the ponies wanted a fitting ruler, Celestia and Luna. I doubt they did find them right away, so there might have been enough time for the ponies to figure out something was wrong with the sun/moon or the planet. That’s why Starswirl and his unicorns started to control the sun and the moon to fight the natural catastrophe and the growing ice age. Later, Celestia and Luna took over the job and that’s how everything started.

Sorry for the wall of text but as soon as I thought about the “why”, the whole idea formed;-) I think I’ll even add it to my fanfic :D

canterlot is on the west side of the mountain. celestia has to raise the sun from the west, or the mountain would block ponies from seeing it rise behind her. she has to look pretty!
