Silfoe explains that. There is day and night cycle, but most ponies are nocturnal now, and magically given the cat-like pupils. Some ponies, however, are still diurnal, including farmers – Like Applejack – who need to be so in order to farm and grow their crops. As such, her eyes were not altered for the lower light of night time.
