Much like Vinyl Scratch, who is actually in the yellow spectrum, her saturation is cranked so far down she's operationally white, again like Scratch.


 
By the exact same token, if you take Rarity and turn her coat saturation up, she turns grey. But ask people what color she is and you'll of course get white.
 
The only time you'll see the "light pink" Celestia and "grey" Rarity are on products where the company oversaturated the colors in printing.
