Honestly I think they just don't think this through. They don't care about the background lore of technology in Equestria, they just use whatever technology they want when they want. It's a combination of us adult viewers thinking too hard and the writers taking the easy route and writing what they feel like rather than writing to the confines of established lore.
Electricity isn't much of a stretch, nor is steam power and some simple gear and piston based machinery like construction vehicles, but we will know there is a very bad problem and the tech writing has jumped the shark when we see a pony booking flight tickets on their computer over the internet and then they take a bullet train to the airport just before texting their relatives on their smart phone... That tech level belongs in Equestria Girls as a way to differentiate the two outside of "one is Pony one is Human."
On another only vaguely related note, I see they are still also uncertain as to what Ponies think of wearing clothes. Sometimes they wear clothes, sometimes they don't, sometimes they talk about being naked or get embarrassed when they lose their clothes, and so forth.
