Self-levitating unicorns were Lauren’s idea though (we can see Twilight levitating herself in one of her pictures, even though she didn’t display this ability in the show before The Crystal Empire).  
However, it’s implied that, discounting babies like Pumpkin who don’t have a conscious grasp on their magic and can self-levitate just because (this debate has been done before, I won’t get further into it), only really powerful unicorns are able to do that (a good way to showcase Starlight’s magical power as rivaling Twilight’s, as she can do it and fire other spells at the same time).  
And of course, when Twilight ascended and got her wings, they made self-levitation redundant for her.

I am not fan of self-levitating unicorns, especially those who can levitate themselves as well as pegasi can fly and yet still be able to cast powerful spells and fight their opponents. It just makes Twilight having wings useless if she could do as well without them.
