I can see the appeal. 2003 Grievous is a total badass. He's basically a Samurai Jack villian in Star Wars universe.
But... I think 2003's portrayal is more Gennedy's inagination and definitely misses the whole point of Grievous as a concept.
His whole point is he thinks he's a badass on the same level as a Jedi, which is why he uses so many lightsabers, but in reality he is a shallow replica of a Jedi. A Jedi fanboy if you will.
He's like Syndrome from Incredibles trying to be some larger than life guy but he's too arrogant to admit he's trying to be something he just can't.
That's why TCW and ROTS make him much more how should we say grounded.
Still I guess he is still pretty powerful even if not godlike in canon
