I’m sure they’d have them, while they are vegetarian in diet the ponies have been shown to eat things that real life horses cannot digest. And since oats are made from wheat like waffles are I’d assume pancakes can exist in Equestria.

Well, there’s not a lot of other reasons to keep them…
 
Besides for leather, that is. Truffle hunting can be done with dogs, so that isn’t much of a reason, and truffles don’t grow everywhere, so it’s unlikely that there are any around Ponyville.

Besides, equines are fully capable of eating meat, so it wouldn’t be that surprising if some ponies, especially the more athletic ones, preferred to get their protein more efficiently.

I used to hate waffles. But then I received a waffle iron as a gift so I could make my own fresh waffles instead of eating frozen ones. Let’s just say things changed that day.
