Trust me, I definitely noticed Celestia and Luna in the crowd. Also, you’re not the only one who imagined her possibly turning everyone into demons, either. Most people assume she was just going to bring them through the portal, as they were.

Actually, if you look closely in the scene where Twilight undoes the hypnosis, you can see Celestia and Luna in the crowd of teenage zombies.  
Also, Sunset could easily turn the rest of her army into demons like she did with Snips and Snails, so she’d have an army of demon alicorns (plus a demonic Celestia and Luna) to fight three alicorns and the element-less Mane Five. (Plus the guards, but they’re all useless except for Shining Armor, and he’s nowhere to be seen.) The only thing that could really stop her is Discord, and even if Sunset did anticipate his “reforming,” he would have gone straight back to his old ways once he learned the Elements and Fluttershy were out of the picture.

I thought the exact same thing.

Speaking of Celestia and Luna, if she brought their human counterparts to Equestria, would they be transformed into alicorns? If so, she would have some serious firepower on her side!

Maybe it’s possible to siphon power from an Element of Harmony without being its bearer.
 
Now think about this: She takes her mindslave army over to Equestria, either has them distract Luna and Celestia long enough to catch Twilight’s friends or does so herself, and taps the rest of the Elements as well. She knows who they are, as she did her best to break them up in the human world. And she knows they are presumably still in the Crystal Empire, since they wouldn’t abandon Twilight.
 
I’d say that’s a better plan than what Chrysalis came up with.
